We had some build-up issues in corn here last year. The only thing that worked was spraying down the shoe with PAM every hour. Other than that you would have to pressure wash the shoe a couple times a day. You could try the stainless, but I would do a small piece first to check. Poly plastic comes to mind too. I would use rivets to install due to the smoother profile compared to bolts.
