As I understand it you need to set the head on a level surface, and use bolts and washers to lock it up from underneath. Exactly what type/size of bolt and washer, and where do they go. I'm hoping someone could provide some pictures but any help is appreciated.

You can get them from Deere, they are a 3/8 cartage bolt, about 4 inches long If you look up the 200 series head on the deere parts site, you should see them there, the also come with a 4 inch round plate. The boltls go through the pans (seals), through the push arms under the head, the round plate goes on the bottom.
