18,000 tonnes/ (15 x 12) hours
18,000 tonnes/180 hours
100 tonne/hour

What buffer factor do you need for end of row turns, moving fields etc and peace of mind on having sufficient capacity up your sleeve (+30%, +50%)?

You should be able to identify some machine options from there.

100 tons an hour isn’t that much for a self propelled chopper. The problem comes with having to haul the material away from it hour after hour. Any travel distance significantly increase the number of hauling items needed. A big Claas or krone is capable of 3-400 tons per hour but then you need to be able to move15-20 or more loads per hour depending on the size of your hauling rigs then if you have a bottle neck at the unload site things grind to a halt quickly
